CULINARY CORNER: One Pot Marry Me Chicken Pasta: In a large pot over medium high heat, cook oil from 1/2 cup oil packed sun dried tomatoes with 1 pound cubed boneless chicken, salt and black pepper to taste, and 2 teaspoons Italian seasoning until cooked, remove chicken; add 2 tablespoons salted butter, 2 cloves garlic chopped, and remaining 2 teaspoons Italian seasoning, cook 1 to 2 minutes, add 3/4 to 1 pound short cut pasta and 2 cups water, cook until al dente, stir in 2 cups whole milk, 2 ounces cream cheese, and 1/2 cup grated parmesan, return chicken with chopped sun dried tomatoes and 2 cups chopped baby spinach, remove from heat and stir in 1/2 cup chopped fresh basil, serve.

I follow Wednesday posts but life has been a bit crazy the past through months. Finally gave quality time to reading everything today. I did not realize you downsized…you are now part of a fun group. We did almost two years ago and have enjoyed the transition. If you posted about your change can you direct me to that post? Would love to hear your thoughts.
