On The Menu This Week: Easy And Delicious Dinners For Late May
It’s the 4th week of May, and the menu is full of good things! From hearty chili to elegant Chicken Lombardy, here’s a full week of delicious dinner ideas to get you inspired.
One of my favorite things about late May is that the kitchen starts to feel connected to the world just outside the back door. The herbs in the garden are growing beautifully, and I love stepping outside to snip fresh rosemary, thyme, or basil to use in whatever is on the menu that evening.
Eating seasonally at this time of year is such a pleasure, and you will see that reflected throughout this week’s menu. From a bright lemony artichoke soup to a gorgeous rhubarb galette, the flavors of late spring are front and center. Pull up a chair, grab your grocery list, and let’s get dinner on the table this week!
MONDAY
Happy Memorial Day! We always try to make it to our local Memorial Day parade when the weather cooperates, but this year it looks like the weekend and Monday are going to be a bit of a wash-out. So instead of firing up the grill for hamburgers in the rain, we are turning to one of our all-time family favorites, and honestly, no one is complaining!
Our family chili recipe has that slightly sweet, deeply savory flavor everyone loves, and while it’s not my mom’s original recipe, it carries all the comfort and warmth of something that has been made and shared with love for years. I almost always make a double batch and tuck the leftovers in the freezer for a quick and easy lunch or dinner down the road.
Served up in big shallow bowls with all the fixings, like sliced green onions, sour cream, shredded cheddar, tortilla chips, and salsa, it becomes a full and satisfying meal the whole family will enjoy. Round it all out with a batch of sweet cream cornbread and Monday dinner is done!
๐ฟ Tip: Chili is always better the next day! Make it on Sunday and simply reheat it on Monday for an even more flavorful, stress-free dinner.

TUESDAY
Tonight’s dinner, Lemony Tuscan Artichoke Soup, is completely new to me, and since I am a huge artichoke fan, it immediately caught my eye. The bright lemony broth and tender artichokes sound absolutely lovely, and I think it would be equally delicious with shredded or rotisserie chicken for a heartier meal.
๐ฟ Tip: When making the no-knead bread dough, mix up a full batch and store it in the refrigerator. You will have fresh homemade bread ready to bake all week long with almost no effort at all!

WEDNESDAY
Wednesday’s dinner is fresh, flavorful, and a little bit fun! Grilled Chicken Kabobs are delicious and easy, but honestly, the star of this meal is the Asian Ramen Noodle Salad.
This is one of those salads I love to serve when we have company because it is different, full of flavor, and never fails to impress. In fact, guests often ask me for the recipe! It’s the kind of side dish that surprises people in the best way and keeps them coming back for more.
๐ฟ Tip: Make the Asian Ramen Noodle Salad a few hours ahead and refrigerate it, but wait to add the crunchy ramen noodles until just before serving so they stay perfectly crisp!

THURSDAY
Salmon makes a regular appearance on our weekly menu, and for good reason. It’s healthy, delicious, and a single recipe almost always gives me a great lunch the next day. This Baked Salmon in Foil with Garlic, Rosemary, and Thyme is a beautiful, fuss-free way to prepare it, and paired with a bright
Asparagus and Lemon Orzo Salad is another new-to-me recipe I’m trying this week. We are eating lots of asparagus since it is in season right now.
Tonight’s dinner feels a little special without much effort.
๐ฟ Tip: Always temp your salmon for perfect results! The USDA recommends 145ยฐF, but I like to pull mine from the oven at 140ยฐF and let the carryover cooking do the rest. You’ll get perfectly cooked, moist salmon every time.

FRIDAY
We have company coming this weekend, so I am already thinking ahead and prepping what I can in advance.
Chicken Lombardy is an elegant but easy dish that is perfect for guests, and since our friends are true foodies, I have a feeling they will either be in the kitchen with me or out at the grill with Bobby!
Served alongside Nani’s Sauteed Rice (they love it as much as we do) and Bacon-Wrapped Asparagus, this is a dinner that feels special and celebratory without being stressful.

SATURDAY
There is nothing quite like a great steak, and this Marinated Herb Butter T-Bone Steak is absolutely company-worthy! We are hoping the weather cooperates so we can enjoy dinner out on the patio with our friends, because good steaks, good company, and a warm May evening sound just about perfect.
A classic Caesar Salad with Homemade Dressing and Chocolate Chip Skillet Cookies for dessert round out a dinner. The skillet cookie is also new to me. I don’t mind friends and family being a “Guinea pig” for helping me test new recipes.
๐ฟ Tip: Make the Dill Pickle Potato Salad a couple of days ahead! The flavors have time to marry and it is so much better for it.

SUNDAY
Our company will be leaving us before dinner. Sunday calls for something easy and comforting. The Slow Cooker Mushroom Chicken is just the thing for a quiet dinner for two, served over noodles. It is warm, satisfying, and practically effortless.
And the Panzanella Salad? That is my absolute favorite. Honestly, I could make that beautiful Tuscan bread salad my entire meal and walk away completely satisfied! I probably will.
๐ฟ Tip: When making the croutons for Panzanella Salad, you want them crisp on the outside with just a little bit of give on the inside. Keep a close eye on them so they don’t get too hard!

SWEET TREAT OF THE WEEK…
Rhubarb is in season, and I wait all year for it! This Easy and Delicious Rhubarb Galette is one of my favorite ways to celebrate that gorgeous, sweet, and tart flavor that only rhubarb can deliver. A galette is rustic, beautiful, and so much easier than a traditional pie, making it the perfect dessert for this time of year.
๐ฟ Tip: Any summer fruit can be easily substituted for the rhubarb, making this recipe incredibly versatile. Strawberries, peaches, cherries, or blueberries would all be absolutely delicious!

I always use your cole slaw recipe. My son LOVES it. And I get requests to make it for picnics all the time.
So happy to hear Loryl! Thanks for letting me know!
I have made the crack chicken alfredo lasagna roll ups before, and I recommend that you use much more alfredo sauce. They tend to dry out without more sauce, but are still very good.
Good Morning Yvonne: I just want to wish you a Very Happy Easter and Spring. Lou and I hope you and your Family have a wonderful Holiday. Thank you for all of your special talents that you have I have learned a lot from you.

Thank you as always for sharing these wonderful recipes! I will try the recipe for the Scalloped Pineapple soon. I have one by Paula Deen that is really good also with cheese. https://www.pauladeen.com/recipe/pineapple-casserole/ I don’t use as much sugar or butter as Paula’s recipe. You will love it if you try it.
Happy Easter to you and your family Yvonne!

Yvonne, I was going to make the arugula salad tonight but your link is broken to the recipe. Thought youโd like to know so you can fix it.
Thanks for letting me know, Nanci.
The link to the slow cooker mushroom chicken isnโt working.
