Whether you’re in the mood for something light and fresh or warm and comforting, this week’s meal plan has you covered. Let’s get cooking!
It’s always a good night for a cozy, comforting dinner, especially when I can use some of the deer hamburger Bobby stocked our freezer with last fall. I love knowing we have something so flavorful ready to use!
These Swedish meatballs are rich, tender, and so satisfying, served over buttery egg noodles. I’m adding a crisp chopped salad to start and pairing everything with smashed broccoli, which gets deliciously crispy in the oven. It’s a simple dinner that feels a little special and so good for a spring evening.

Chicken can be such a weeknight hero when it’s made well, and this recipe is definitely one of those that turns out tender, flavorful, and anything but boring. It’s layered with creamy spinach, smoky bacon, and just enough cheese to make it feel a little indulgent.
I’m serving it with Nani’s sautéed rice, a simple family favorite that always shows up on our table, along with my go-to arugula salad that everyone asks for again and again. This is one of those dinners that feels a little special but is still easy enough for a busy night.

A hearty salad is one of my favorite ways to keep dinner simple, especially this time of year. It’s filling, full of flavor, and comes together without much fuss.
This BBQ chicken salad has all the Southwest flavors we love, with plenty of texture and just the right balance of fresh and savory. It’s the kind of meal that feels light but still completely satisfying, which is just what I want midweek.

Fish is always a nice change during the week, and this cod recipe is one I turn to when I want something quick, light, and really flavorful. It’s tender and flaky, with a simple lemon-garlic butter that makes it taste like so much more effort than it is.
I’m pairing it with crispy air fryer potatoes and a cheesy asparagus casserole, which adds a little comfort to the meal. It’s a fresh, balanced dinner that feels just right for this time of year.

Friday nights call for something easy and relaxed, and homemade pizza is always a favorite at our house. It’s simple to pull together and such a nice way to ease into the weekend.
This version with mushrooms, pancetta, and caramelized onions is full of rich, savory flavor. I’m adding a crisp Greek salad on the side to lighten things up and round out the meal. It’s a cozy, no-fuss dinner everyone looks forward to.

The Best Greek Salad
This is the kind of dinner I love on a weekend, quick to make and full of bold flavor. A good stir fry comes together fast, and everything cooks in one pan, which makes cleanup easy too.
The beef and asparagus pair so well together, and using beef stock instead of water gives the sauce a richer taste. I’ll serve it over rice to soak up all that goodness. It’s a simple, satisfying meal that’s perfect for a busy Saturday.

Sunday evenings are always a little slower at our house, and I love having a comforting meal to share, especially when we’re gathered around the table catching up. When my friend Donna comes over, it makes the evening even more special.
Meatloaf is one of her favorites, so it’s definitely on the menu, served with creamy mashed potatoes and roasted root vegetables. And since no Sunday dinner feels complete without something sweet, we’ll enjoy warm chocolate cobbler with ice cream while we relax and watch our show together.
