With Valentine’s Day in the air, this week’s menu is all about cozy meals that feel thoughtful without being complicated. These are the kinds of recipes that work for a quiet dinner at home, a casual weeknight, or a little something sweet to share. Nothing fussy, just good food that makes the week feel easier and a bit more special. We are babysitting our three grandsons so we are having a nice dinner they will enjoy too.

Monday’s menu is all about comfort and a little nostalgia. Nani’s Sautéed Chicken is a heritage recipe from my childhood, and it’s one I still make today, which tells you just how good and time-tested it is. This simple, deeply flavorful dish makes the whole house smell amazing as it cooks. Served with creamy, make-ahead mashed potatoes and roasted asparagus, it’s an easy, cozy dinner that feels special without a lot of fuss.

Soup really is perfect any time of year, but there’s something especially warming and comforting about it in the winter. A bowl of soup feels nourishing and cozy, and it’s always welcome at our table. I almost always double soup recipes so we can enjoy leftovers for lunch during the week or tuck some away in the freezer for another day. It’s one of my favorite ways to cook once and eat well more than once.

Our family are big fans of salmon, so this is always a welcome dinner at our house. The Salmon Cakes Recipe with Homemade Tartar Sauce on the blog is a modernized version of what I ate as a child. We love this dish and it’s one I make often. On this week’s menu, I’m trying a slightly different version from another favorite blog, just for something new.

I’m serving it with Nani’s Sautéed Rice, another heritage recipe my grandmother made for us and passed down through the years. It’s a comforting, meaningful meal with a little variety.

I must be feeling a bit nostalgic, or maybe just hungry for the tastes of my childhood, because today’s meatloaf is very close to the one I make and grew up eating. It’s classic, comforting, and always a hit at the table.

And let me sing the praises of make-ahead mashed potatoes for a moment. They can be made a day or two in advance, or even earlier in the day while you’re already cooking, then simply popped into the oven when dinner rolls around. Add a vegetable, and you’ve got an easy, comforting meal that feels just right.

Friday night is always a great night for pasta, and this dinner is one I know Bobby will especially love since he’s a big fan of both pasta and mushrooms. A creamy sauce with tender chicken, mushrooms, and asparagus feels just right for easing into the weekend. Paired with a simple Caesar salad, it’s a comforting, satisfying meal and a perfect way to end the week on a delicious note.

For Valentine’s Day, I decided to keep dinner cozy and full of love. My little grandsons have a big love for beef, so this easy crockpot recipe felt just right, comforting, simple, and absolutely delicious. It’s the kind of meal that cooks away while you enjoy the day, and makes the house smells wonderful.

And then there are the brownies… rich, gooey, and deeply chocolatey, the perfect sweet ending. This menu is all about enjoying our boys, sharing good food, and pouring a little extra love into the day.

Sunday dinner is all about easy comfort, and this is one of those meals I love having the ingredients for on hand. Bacon makes everything better, and this creamy chicken dish is rich and satisfying without being heavy.

I like swapping heavy cream for a simple combination of evaporated milk and Greek yogurt, which lightens things up while still keeping all the flavor. Paired with hearty, flavorful sides, it’s a relaxed, delicious way to end the week and head into a new one.

SCONES ON A PLATE

I’ve been making this week’s sweet treat for years, and it is one of those happy little surprises. Delicious overripe bananas are delicious. If you’re tired of making banana bread like delicious Streusel Topped Banana Bread, this is such a fun and cozy way to use them up.

  1. The salmon recipe looks delicious. I will be fixing that tonight – it’s a good way to use up my fresh rosemary and thyme, as well as my Trader Joe’s ghee. I don’t like buying a lot of fresh herbs for just one recipe and then have to discard them. I do wash herbs and then wrap them in paper towels and store in ziplock bags. They keep for about 2 weeks that way. Up next will definitely be the lemon chicken soup. It’s been on my recipe “to do” list for a while now.

    1. That’s how I save my herbs too. I just got basil, thyme, and rosemary in little pots and I’m keeping them in a sunny spot in my kitchen. Hopefully, I’ll transplant them to bigger pots to grow all summer long.

OOOH! I just brought some fresh scallops back from St. George Island, FL and can’t wait to use this recipe! This weeks menu looks yummy. I loved your analogy of getting a dog when you were talking about decorating style! After record breaking rain, we are finally getting sunshine and warm weather. The trees are full of blooms and the birds are singing! God is wonderful!

  3. I very much look forward to your menu plans each week. We have similar taste in food; delicious, simple and nutritious!
I’m only sorry that I have waited so long to try Nani’s chicken. It is outstanding! It is what I think of as “supper” food, comforting and so easy that I can easily make it without even having to reference the recipe next time! I served it over brown rice, and my husband and I both loved it.
Definitely going into my meal rotation!
    Thank you!

    1. So glad you like Nani’s chicken recipe. She is looking down from heaven and smiling!!! Thanks!

This creamy garlic chicken sounds delicious. I used a lot of the split chicken breasts and this recipe sounds like one’d like served over some whole wheat pasta. The sauteed scallops look very appetizing. We love scallops! I could maybe eat 5!

  5. Planning to try this chicken recipe tonight, as already took out chicken breasts to thaw. Sounds much better than my plan. Thank you. Enjoy your visit with your sweet family this weekend.

I do especially enjoy your menu posts….however, there are so many ads and pop ups I can hardly find the recipes. It would be great if you would cut back big time on adds.
It sure would make your posts more enjoyable and usable.
    Thanks!

Made a big pot of your loaded potato soup yesterday and will be having it for tonight’s meal. Our temperatures here in N.C. were in the teens this morning when I got up so definitely soup weather. I find all your menu recipes that I have tried to be delicious and look forward to more. Have a good last weekend of Jan. I found some blooms on my Hellebores the other day so Spring is coming?

  8. Lots of great recipes I saved to my Pinterest board. Can’t decide what to make first. Thanks for sharing!
