On The Menu Week Of August 18th

August is such a great month for garden-fresh eating. Our backyard tomatoes are going wild right now, and I’m using them every chance I get. There’s just nothing like a homegrown tomato with a sprinkle of salt, so simple and so delicious. We’re also enjoying corn, apples, zucchini, and all the late-summer produce showing up at our local farm market.

I’m often asked what I eat for breakfast and lunch. Truthfully, I’m not a big breakfast person. Around 10:00, I usually have a protein shake and a piece of fruit. If I’m really hungry, I’ll eat red beet eggs. I LOVE them.

Lunchtime is all about keeping it light. I feel best when I don’t eat too heavily midday, so I usually go for leftovers, fresh garden tomatoes with basil and olive oil, or a simple salad. Arugula or Caesar salads are my go-tos, and some sort of protein. My favorite right now is air fryer salmon with lots of lemon. I always have a batch of homemade soup on hand, as well.

And in case you’re wondering, do I eat every recipe On The Menu each night? Not quite, but Bobby does. I mostly cook for him, and he’s happy to enjoy all the good food coming out of the kitchen. I tend to eat the fresh veggies, protein, and just a little carbohydrates. I have arthritis, and it’s a bear! Since I have changed the way I eat, I feel so much better and have lost weight. Yay!

Another vegetable that is starting to show up in local farm markets is cabbage. And every late summer through fall, I love to make cabbage dishes like my Nani’s delicious Cabbage Soup.

Sometimes I make it with pork, and sometimes a combination of hamburger and sausage. This recipe is part of my childhood, and I make it like my grandmother taught me!

I was introduced to Raw Apple Cake in my first year of teaching! We had a teacher luncheon, and some angel-of-a-parent made this cake! Oh, it is my very, very favorite!

I feel like I’m giving you a gift if you have not tried Raw Apple Cake. If you make one thing on the menu this week, this should be it!

I just took this delicious Raw Apple Cake out of the oven and glazed it. Oh, yum! Our whole house smells scrumptious.

    search through old emails from your site, find the menus in your index and click on it. The menu for August 13th was

    there so I was able to access it. I love and look forward to the menu plans each week. Thank you for all I’ve learned
