The 4th week of May is one of my favorite times to cook. Farm stands and farmers’ markets in our county are absolutely bursting with the best produce of the season right now, and I am taking full advantage of every bit of it. Asparagus is everywhere, and the early strawberries are finally making their appearance, even though it has been a tough year for this sweet little fruit. I am so grateful for every pint I can get my hands on!
A few days ago I stopped at a local farm stand to grab some rhubarb for a galette, and I noticed a man buying up nearly every single stalk in the place. I was so curious I just had to ask what he was planning to do with all of it. His answer? Rhubarb wine. I had no idea that was even a thing, but now I kind of want to try it! It is funny how a quick conversation at a farm stand can open up a whole new world.

That little town takes its mushrooms seriously, and if you ever get the chance to visit, the mushroom soup and bisque at the local restaurants there is absolutely worth the trip.
These Pepperoni Pizza Stuffed Portobello Mushrooms are right up Bobby’s alley, and when paired with a quick, creamy 15 Minute Creamy Garlic Pasta and a crisp Chopped Italian Salad with Homemade Italian Dressing, this is the kind of dinner that feels like a treat on a weeknight.
We try to eat salmon at least once a week, and with so many delicious salmon recipes out there, we never get bored! This Seared Salmon with Lemon Garlic Cream caught my eye right away, and I just know it is going to be a new favorite. Salmon in a bath of creamy, garlicky lemon sauce sounds like pure heaven to me. Perfectly Roasted Asparagus and Moroccan Lemon Couscous make this a complete and satisfying meal with very little extra effort.
Saturday is a full one this week! We are spending part of the day furniture shopping, so getting dinner started in the slow cooker before we head out is an absolute lifesaver. By the time we get home, the house smells incredible, and dinner is practically done.

It looks impressive, but roasts are honestly one of the easiest things you can make, especially with a good meat thermometer by your side. I’ll add thinly sliced carrots to spread around the roast as it cooks. They should be delicious in all the onions and beef drippings.
The Raw Asparagus Salad with Walnuts and Parmesan is absolutely incredible, and every single time I serve it, someone asks me for the recipe. Mashed Celery Root Mashed Potatoes round out this meal perfectly, and the best part is that everyone pitches in, from setting the table all the way to cleanup. These are the dinners I live for.
