Even though summer is in full swing here in Lancaster Co. and the days are long and warm, I still love cooking the classics, or recipes that are a delicious spin on them. This week’s menu includes Garlic Parmesan Meatloaf, a Hearty Italian Sausage Rigatoni, and a beautiful Healthy Ginger Soy Cod that I cannot wait to try for the first time.
I am pairing those tried-and-true comfort recipes with some of the best seasonal cooking of the year, think an All-American Lipton Onion Soup Hamburger hot off the grill, tender Balsamic Glazed Asparagus, and the juiciest Corn on the Cob Boiled in Milk and Butter. To me, that is the most perfect combination of summer cooking there is!
This week’s menu has something special for every night of the week, whether you are feeding a hungry family on a busy weekday, hosting a dear friend for Sunday dinner, or simply treating yourself and your husband to a quiet, delicious meal at home. Let’s cook good food this week!
Monday is one of my busiest blogging days, so when I come across a recipe that gets a delicious dinner on the table in just 15 minutes, I look forward to making it! Bang bang sauce is that perfect combination of creamy, sweet, and just a little spicy, and I have a feeling it is going to be absolutely wonderful on salmon.
Rounding out the menu are Sesame Garlic Noodles and Balsamic Glazed Asparagus for a complete dinner that feels anything but rushed.

Chicken Cacciatore has always been one of Bobby’s favorites, so Tuesday is going to be a very happy night at our house! This Creamy Chicken Cacciatore looks rich, deeply flavorful, and just the kind of comforting dinner that deserves to be waiting after a long day of seeing patients.
Linguini, and a fresh Orzo Greek Pasta Salad round out the menu beautifully.

There is nothing quite like roasting a chicken, and I do it often! It is one of those meals that just keeps giving a beautiful dinner on the table, wonderful leftovers for the next day, and then I use the carcass to make the most nourishing homemade stock or bone broth. If you plan to make stock, I highly recommend starting with an organic chicken.
This Garlic Herb Butter Roast Chicken looks like an absolute beauty, with that herb butter tucked in and roasted to golden perfection. Make Ahead Mashed Potatoes and Green Beans With Mushrooms make this a classic, soul-satisfying meal.

Lipton Onion Soup hamburgers are pure nostalgia for me! I grew up on these juicy, flavor-packed burgers and they are just as delicious today as they were back then. We follow the directions right on the box, and the result is a burger that is hard to beat. We love making them on the grill, but they are just as easy to cook in a skillet on the cooktop, or in the oven. For the oven, simply preheat the oven to 375 degrees, then cook about 6 to 7 minutes on each side.
Broccoli Salad With Bacon, Raisins, and Cashews is the perfect summer side to round out this classic cookout dinner.

My dear friend Donna is joining us for dinner tonight, and I’m making this Garlic Parmesan Meatloaf in her honor since it is one of her very favorites!
Here is a little kitchen tip I love to share: adding 1/4 to 1/2 teaspoon of baking soda per pound of ground beef will make your meatloaf incredibly tender. It is pure science, and it really works!
Loaded Mashed Potato Casserole and Pan-Fried Garlic Bacon Broccoli round out what is sure to be a wonderful Sunday dinner, and we are finishing the evening with a sweet Mixed Berry Crisp with Vanilla Ice Cream. She loves crips recipes and ice cream is her favorite. She eats it with a fork.

Every single one looks delicious! I am really looking forward to trying the fish recipe. I have more problems trying to find good ways to prepare fish than any other. My husband would eat fish of some kind every day but I get in such a rut either frying (which I try to stay from) or a quick saute so this recipe will be a welcome change. These are all “tryers” for me because we would both like them all. He is not quite as adventurious as I am when it comes to new recipes. Thanks for all your hard work!!
