Tonight’s carnitas are paired with refried beans. We love them! I came across a post about how to make canned refried beans taste like homemade. It sounds wonderful, so I’m giving it a try.

Tonight’s menu features a classic and easy family dinner: roast chicken. It’s easy comfort food! I’m making a beautiful Garlic Herb Butter Roast Chicken from Katerina at Cafe Delites. A roast chicken is such a scrumptious and easy dinner. Once prepared, it roasts in the oven for a little over an hour! We love the leftovers, and I use the carcass to make bone broth or stock.
I’ll add celery, onion, and carrots to the roaster and let them cook in all those glorious buttery chicken juices. Writing this is making my mouth water!
For decades, I whipped potatoes with a hand-held mixer until I tried a ricer! Wow! I love the texture of mashed potatoes riced instead of whipped. They are so much lighter and fluffy! You should give a ricer a try!
Most nights, I’m not much of a dessert eater. But I saw this recipe for chocolate caramel fudge sauce and could not resist. So, I’m having a small bowl of dessert tonight.

I make this soup a lot! If it’s not on the dinner menu, then I make it and have it for lunch. If you try one thing this week, this soup should be it. And it’s so so easy!

One of my favorite flavor profiles is Mediterranean. It reminds me of sunshine. Tonight’s dinner is glorious baked cod in a lemony sauce. I think I’ll add some capers to the recipe because cod, capers, and lemons are a tasty trio.

The cod dish is served with Israeli couscous that is married with mushrooms and spinach. I could make this side dish a meal! And don’t forget the Greek Salad. I think every home cook should know how to make three salads. Greek is one of my “three”.

I’m always on the lookout for delicious recipes that use boneless, skinless chicken! I’m serving the chicken dish with a fabulous linguini bathed in cream and parmesan cheese and kissed with sundried tomatoes. I’ll be making this again soon for company. So this is a practice round.
I’m a huge fan of Green Goddess salad dressing. I fell in love with the recipe below because it uses anchovies. Anchovies are umami flavor bombs.

Tonight’s dinner is a tasty one!!! A big thanks fo Lauren at Tastes Better From Scratch! I love her recipes. Lauren’s recipe calls for hamburger meat. If you don’t have a hamburger, use chicken or make it with extra refried beans!
I’ll be adding shredded lettuce to the top of my Mexican pizzas! Delicious!

Well let me tell you,you have outdone yourself. What a fantastic menu this week. Wow ,I can’t wait to start cooking. And my husband can’t wait either. Thank you.
Wow – some great choices here. I am going to fix the asparagus stuffed chicken breasts tonight. I have prepared a similar recipe of pasta with sun-dried cream sauce before – thanks for the reminder. I love having a fully stocked pantry in times like these. It makes it easier to put together creative delicious meals and not have to leave the house. I’ve always said that there aren’t too many problems that can’t be helped by a good meal. Kind of simplistic, but it does help to know that at least we can eat well.
