On The menu #212
If you’re already thinking about Thanksgiving, it’s nice to have a few dinners figured out for the week ahead. Tuesday’s chicken pot pie is a good place to start. It has golden biscuits on top, and a rotisserie chicken and a can of refrigerated biscuits make it easy enough for a weeknight.
If you’re picking up a rotisserie chicken on the way home, grab a head of romaine for the Caesar salad while you’re there.
For the week of November 9, there’s also sausage and tortellini soup, maple-glazed salmon with roasted sweet potatoes, and roast chicken for Sunday. And if you have a few apples to use up, there’s an apple cake at the end.
Monday | Sausage and Tortellini Soup

With Italian sausage, cheese tortellini, and spinach, this soup makes a dinner on its own. Put some crusty bread on the table for dipping.
On the menu
Italian Tortellini Soup with Sausage and Spinach and crusty bread.
Tuesday | Biscuit-Topped Chicken Pot Pie
Make the Caesar dressing while the pot pie is in the oven. Toss it with the romaine just before you sit down so the lettuce stays crisp.
On the menu
Easy Biscuit Chicken Pot Pie from Spend With Pennies and StoneGable’s Homemade Caesar Salad.
Wednesday | Maple-Glazed Salmon
Get the sweet potatoes into the oven first so they have time to brown while you prepare the salmon. A squeeze of lemon on the green beans is especially good alongside the sweet maple glaze.
On the menu
Maple-Glazed Salmon, Oven-Roasted Sweet Potatoes, and green beans with lemon.
Thursday | Slow Cooker White Chicken Chili

This is a good dinner for a night when everyone gets home at a different time. Set out lime wedges, sliced avocado, and cornbread so everyone can fix a bowl when they’re ready.
On the menu
Crockpot White Chicken Chili and Sweet Cream Corn Cornbread.
Friday | Baked Mac and Cheese
Roast the broccoli until the edges are crisp, then squeeze a little lemon over it before serving.
On the menu
Baked Mac and Cheese and Roasted Broccoli with lemon.
Saturday | Beef Pot Pie
The beef and vegetables simmer before they go under the puff pastry, so save this one for a day when you have a little more time. A green salad with Dijon vinaigrette is all it needs on the side.
On the menu
Beef Pot Pie from The Cozy Apron and a green salad.
Sunday | Lemon and Thyme Roast Chicken
The chicken roasts over onions, carrots, and fennel. If you’re making baby potatoes to go with it, spoon some of the pan juices over them at the table.
On the menu
Ina Garten’s Perfect Roast Chicken with roasted vegetables and baby potatoes.
Something Sweet | Apple Cake

The chopped apples soften as the cake bakes, leaving little pockets of fruit in each slice. Have a piece with your afternoon coffee, or warm a slice and add a scoop of vanilla ice cream for dessert.
Bake this week
StoneGable’s Raw Apple Cake.
