7 Summer Dessert Recipes That Are Simple, Fresh, and Delicious
These 7 easy summer desserts are fresh, fruity, and simple to make, perfect for warm-weather entertaining, family dinners, and backyard gatherings all season long!

There is something so wonderful about summer desserts. The fruit is ripe and bursting with flavor, the days are long and relaxed, and the last thing anyone wants to do is spend hours in a hot kitchen. That is exactly why I love simple desserts that are easy to make but taste like you put so much more effort into them than you did!
Fresh, in-season fruit is really the secret ingredient in every single one of these recipes. When fruit is at its peak, even the simplest dessert tastes absolutely incredible. A handful of strawberries, a slice of cool watermelon, a handful of cherries from the farmers market…summer fruit just makes everything taste better.
Last week I hosted a birthday luncheon for a dear friend and served a Strawberry Rhubarb Galette with vanilla ice cream for dessert. Everyone loved it, and several guests made the sweetest comments about the crust! And just between you and me, that galette was one of the easiest things on the whole menu. That is the beauty of a great summer dessert. It looks and tastes like you fussed, but it is really quite simple.
These seven recipes are some of my favorites for warm-weather entertaining, backyard dinners, potlucks, and lazy summer afternoons when something sweet just hits the spot. From mini cherry pies in mason jars to a gorgeous strawberry lemon pound cake, there is something here for everyone and every occasion.
Let’s dig in!
Mini Cherry Pies In Mason Jars

There is something absolutely charming about a dessert served in its own little jar! These Mini Cherry Pies are individual, adorable, and taste just like the real thing, with a buttery, flaky crust and a sweet, bubbling cherry filling. They are perfect for a backyard party or a Fourth of July celebration, and your guests will love having their very own little pie!
The star-shaped crust cutouts on top make these little pies look like they came straight from a bakery, but they are surprisingly simple to put together.
This recipe is one of my oldest and most beloved on StoneGable, and with America celebrating its 250th birthday this July 4th, it feels more perfect than ever! I am planning to have the grandkids help me make these for our whole family gathering. There is nothing sweeter than little hands helping in the kitchen, especially when the result is this delicious!
๐ฟ TIP BOX: Make these a day ahead and store them in the refrigerator. Just before serving, warm them slightly in the oven and add a scoop of vanilla ice cream or a dollop of whipped cream on top. Your guests will think you fussed all day!
Strawberry Lemon Pound Cake With Lemon Glaze

This is the kind of cake that disappears fast! Strawberry Lemon Pound Cake is dense, moist, and loaded with fresh strawberries and bright lemon flavor. The lemon glaze on top adds just the right amount of sweetness and tang, and it makes the cake look so pretty on a cake stand or dessert table. This cake tastes even better the next day!
One of the things I love most about this cake is how incredibly versatile it is. I love to make it when we have overnight guests or family staying with us. It is perfect sliced and served with coffee in the morning while breakfast is being made, and just as delicious as a dessert that evening with a scoop of good vanilla ice cream. One cake, two occasions, and everyone is happy!
๐ฟ TIP BOX: For the best flavor and texture, use room temperature eggs and butter before mixing your batter. It makes a real difference in how light and tender the finished cake turns out!
Scrumptious Summer Rhubarb Galette

This is the dessert I served at my friend’s birthday luncheon, and it was the star of the whole meal! A galette is basically a free-form pie, which means there is no pie dish to fuss with and no crimping required. The rustic, imperfect edges are part of its charm, and the sweet strawberry rhubarb filling is absolutely gorgeous.
Serve it slightly warm with a generous scoop of vanilla ice cream, and I promise you will get rave reviews every single time!
This is, hands down, my number-one summer dessert, and everyone who tries it loves it! I change it up all summer long using whatever fruit is in season, so it never gets old. And here is something that makes me smile every time: my nine-year-old grandson makes this all by himself. If that does not tell you how easy it is, nothing will!
๐ฟ TIP BOX: Do not worry about making your galette look perfect. The beauty of a galette is its relaxed, rustic look! Simply fold the edges of the dough up and over the filling, and it will come out of the oven looking like it was made by a French pastry chef.
Easy Summer Cobbler From A Box Mix
This one is pure summer comfort in a baking dish! Easy Strawberry Cobbler starts with a box mix, which means it comes together in almost no time at all, but it tastes completely from scratch. The topping is golden and slightly crisp, and the strawberry filling underneath is sweet, jammy, and absolutely delicious.
Serve it warm with a big scoop of vanilla ice cream and watch it disappear from the table in minutes!
This is a recipe I make all the time, and my family loves it just as much as I do. With only four ingredients, it is one of the easiest desserts in my repertoire. I make it all summer long, swapping in whatever fruit looks best at the farmers market or is growing in the garden. It is that flexible and that good!
๐ฟ TIP BOX: Fresh strawberries are wonderful here, but frozen strawberries work beautifully too. Just thaw them first and drain off any excess liquid before adding them to your baking dish for the best results.
Glazed Lemon Zucchini Bread
If your garden is overflowing with zucchini this summer, this recipe is going to become your new best friend! Glazed Lemon Zucchini Bread is tender, moist, and packed with bright lemon flavor. The sweet glaze on top takes it from everyday quick bread to something that feels a little special.
Do not let the zucchini fool anyone. It practically melts into the batter, making the bread incredibly moist without adding any vegetable flavor at all!
I have been making this recipe for decades, and it all started with a garden full of overachieving zucchini plants that needed to be used! That is the best kind of kitchen problem to have, if you ask me. The zucchini works its quiet magic in the batter, making this bread wonderfully moist in a way that nothing else quite replicates. Once you make it, you will understand why it has been in my recipe rotation for so long!
๐ฟ TIP BOX: Shred your zucchini and then squeeze out as much moisture as possible using a clean kitchen towel before adding it to the batter. This one simple step keeps your bread from turning out too wet or dense.
Healthy Strawberry Shortcake
Yes, you absolutely can have strawberry shortcake for breakfast, and this recipe makes it completely guilt-free! Healthy Breakfast Strawberry Shortcake is light, fresh, and made with wholesome ingredients, making it perfectly appropriate for a special summer morning or a weekend brunch.
It is one of those recipes that feels indulgent but is actually good for you, and that is always a win in my book!
Our family has been enjoying this healthy-ish shortcake for breakfast since my children were little, and it is still just as loved today! Instead of serving it with whipped cream, we pour cold milk right over the top, which is absolutely wonderful. The shortcake itself is more cake-like than biscuit-like and a touch sweeter, making it feel like a real treat at the breakfast table. And here is a little bonus: it is just as delicious served as dessert too. One recipe, two occasions, and everyone is happy!
๐ฟ TIP BOX: Macerate your strawberries by tossing the sliced berries with a little honey or maple syrup and letting them sit for about 15 minutes before serving. They will become beautifully juicy and syrupy, which makes every single bite taste incredible.
