Easy Herby Chicken Salad With Lemon And Dill

This easy to make chicken salad is packed with crunchy celery and onion, tender shredded chicken, and fresh herbs, all tossed in a tangy lemony dressing. Perfect for lunches, dinners, or a simple appetizer.

Ingredients

  • 4 cooked boneless, skinless chicken breasts, shredded or chopped about 2 1/2 lbs
  • 1/3-1/2 cup red onions, finely diced
  • 3 stalks celery, finely diced
  • 1 1/2 cup mayonnaise
  • 1/4 cup milk or buttermilk
  • juice from 1 lemon about 3 TBS
  • 3 TBS fresh dill, finely chopped
  • 2 TBS fresh parsley, finely chopped
  • 3/4 tsp salt
  • 1/2 tsp pepper

Instructions

  • In a large bowl, mix together the chicken, onions, and celery. Set aside.
  • In another medium-sized bowl, add the mayonnaise, milk, lemon juice, dill, and parsley.
  • Pour the mayonnaise over the chicken mixture. Add salt and pepper and toss.
  • Refrigerate for at least 1 hour or overnight before serving.
