9. CULINARY CORNER: 30 Minute Chicken Noodle Soup: Heat 1 teaspoon extra virgin olive oil in a soup pot over medium heat. Add 1/2 cup diced celery, 1/2 cup chopped sweet onion, and 2/3 cup sliced carrots, cook 5 minutes. Add 64 ounces chicken stock, 2 cups shredded rotisserie chicken breast, and 1 tablespoon dried parsley, bring to a simmer for 5 minutes. Bring to a boil, add 4 ounces whole wheat elbow pasta, and cook until tender. Season with about 3/4 teaspoon kosher salt, to taste. Garnish with fresh parsley, if desired.
