Welcome To Weekly Wednesday Wish List #204

This is such a beautiful time of year here in Lancaster County! The flowering trees have traded their blossoms for leafy green canopies, and now it’s the poppies, lilacs, and summer annuals putting on a show. Peonies and the first hydrangeas are just about ready to burst into bloom—just a week or two more. It’s a gardener’s delight.

One of my favorite things to do is bring a little bit of the outdoors inside. Right now, a big, lacy bouquet of lilacs sits on the white buffet in our living room, filling the whole space with their sweet fragrance. As late spring slips into summer, I’m busy potting geraniums to enjoy indoors and clipping small sprigs of flowers and herbs to tuck into jars and bottles throughout our home.

I hope you’re enjoying the beauty of God’s nature just outside your door—and maybe even bringing a little of it inside to enjoy too!

8. SMALL PLEASURE OF THE WEEK: One of the nicest things that happened to me this week was receiving this intoxicating candle from my son for Mother’s Day! How did he know?? (It’s heavenly, and comes in a beautiful glass jar that you can use after.)

1.) With summer on the way, I gave our living room a quick refresh using things I already had, plus a few simple additions. Nothing major changed…just new pillow covers, a few fresh flowers, and a bit of styling on the mantel. But even those small updates made the whole space feel lighter and more seasonal. I hope it inspires you to try a few easy changes in your own home.

  • This old fashioned rhubarb cake recipe is made with simple ingredients. It’s moist, comforting, and perfect for spring or summer baking. It can also be easily adapted to make rhubarb muffins. 
  • Make this chicken salad with apples for an easy lunch or a casual dinner. Pile the chicken salad on thick toast for a filling and crunchy sandwich. It’s delicious!

9. RHUBARB BUCKLE: The perfect recipe for in-season rhubarb. In a medium bowl, whisk together 1 cup all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon kosher salt. Set aside. In a separate bowl, cream 4 tablespoons (1/2 stick) unsalted butter and 3/4 cup sugar until light and fluffy. Add 1 large egg and mix until fully incorporated. Stir in 1/2 cup buttermilk and 1/2 teaspoon vanilla extract. Add the dry ingredients and stir until just combined. Fold in 2 cups chopped rhubarb. Pour the batter into the prepared baking dish and spread evenly. In a small bowl, mix together 2 tablespoons unsalted butter (melted), 1/2 cup sugar, 1/3 cup all-purpose flour, and 1/2 teaspoon cinnamon until crumbly. Sprinkle the topping over the batter.

Bake for 40 to 45 minutes or until a tester inserted into the center comes out clean. Let cool slightly before serving.

ANSWER TO #7: Memorial Day was once called Decoration Day. It was initially a day to decorate the graves of soldiers, both Union and Confederate, who had given their lives in the Civil War. A paper poppy is worn on Memorial Day. It became the symbol of the fallen after the poem Flanders’ Field was published.
