Welcome To Weekly Wednesday Wish List #176

I’m not really a Halloween person. I don’t like to decorate with ghosts, gouls or witches. Instead I’m decorating our home with late fall in mind. It’s such a beautiful time of the year in my neck of the woods. Right now, I’m taking down quite a bit of my fall decor and just rearranging the best pumpkins, filling bowls with pinecones and even adding a few Christmas greens along with them. However, you choose to decorate your home this time of year, make room for a little hint to the season ahead.

8.) THE SIMPLEST MEATLOAF EVER FOR SANDWICHES: Add 2/3 cup milk into a measuring cup. To the milk, add one-and-a-half hamburger buns broken into small pieces. (Or you can use bread.) Let the bread soak in the milk. In a large bowl, mix together 1.5 lb. ground beef, 1 egg, 2 to 3 tablespoons Worcestershire sauce, the milk-soaked bread, 1 teaspoon salt, 1/2 teaspoon pepper. (I use my clean hands to mix.) Place mixture in an 8 x 8 inch baking dish. Press it down into an even layer. Bake at 375 degrees F for 30 minutes. Let sit for 5 minutes before cutting.

9.) Thanksgiving Day PSA: Let’s talk Thanksgiving Day gravy. Over the years, I have tried many different methods…from simply buying it at the grocery, to making it from scratch with turkey drippings. The best gravy I ever made was a few years ago, and I followed this recipe. It’s a five minute video that’s been viewed more than a million times…and it tells you exactly what to do. And it’s amazing.

10.) November is just about here…are you ready? If not, no worries. We’ll get everything accomplished together. XO

Toss 2 lbs. peeled carrots cut into 2-inch- pieces, halving larger pieces, and 1 small onion, peeled and quartered, with 2 TBS. olive oil and 1 1/2 tsp honey in a large bowl. Sprinkle with 1/2 tsp ginger, 1/2 tsp cayenne pepper, 1/2 tsp cinnamon, 1/2 tsp salt and 1/4 tsp pepper and toss to combine. Put the carrots and onion on a rimmed baking sheet along with halved garlic bulb, drizzling with olive oil, and roast for 15-25 minutes until soft. Set aside. In a Dutch oven, bring 4 cups of vegetable (or chicken) stock to a boil. Turn off the heat. Add 1-15 oz can of pumpkin puree (not pumpkin pie filling) and stir to combine. Add carrots, 4 squeezed-out garlic cloves, and 2 TBS lemon juice. Blend with an emersion blender or in a regular blender in batches. Put everything back into the Dutch oven, salt and pepper to taste and heat. Serve with a dollop of sour cream, creme fraiche, roasted pepitas, or micro greens.

10. CHRISTMAS FINDS:

ANSWER TO #7: Reese’s Peanut Butter Cup is the most popular candy in a trick-or-treat bag. Candy corn was originally called “chicken feed.” Now you know.

Happy Wednesday, friends!
