Bobby and I have a new hobby. We both got bikes and are starting to ride the many rail-to-trails in our area! How fun! Biking is great exercise, and I can’t believe all the places we can ride and sights we can see, even in our local area! On the food front, our garden is bursting with all kinds of veggies! Here’s what’s on the menu this week!

Here’s what’s On The Menu for the week of June 9th.

We love salmon and try to eat it at least one meal a week. I also make extra for a lunch or two with a salad. I’m all about doubling up on a recipe to make other meals easy! 


I’m all for making an easy dinner. I’m not cooking tonight. Sometimes, a delicious cold dinner on a warm day tastes delicious.

Oh, Bobby will love this for two reasons… pasta and easy cleanup! After all, he does do the dishes. Lucky me!


Beef brisket is fabulous slow-cooked in a smoker all day, but when we don’t have time to tend it all day, I opt for the slow cooker! This recipe looks scrumptious!


There are two words that make me weak in the knees in this recipe. Chimichurri- a divinely garlicky sauce filled with herbs… and spatchcock- the best way to get a crispy chicken! I can’t wait to make this recipe! 


The key to perfect scallops is to get a golden crust on the outside. And, of course, never overcook them! Scallops are a favorite of mine!


This year, Father’s Day will be a quiet affair. Our children and their families will not be with us. So after church, Bobby will golf, and we’ve invited a few friends over for dinner. After dinner, we will play cards so he can use the gadget I got him that shuffles and deals cards. On a recent trip to Florida, we were introduced to a new card game called 4 Up, 4 Down. It’s so much fun!

Today’s main course from Alyssa at THE RECIPE CRITIC is one I’ve made over and over. It’s such a winner, company-worthy, and easy to make! Win/win!


When it’s strawberry season, I get a little crazy making everything I can think to put this summer fruit in! This strawberry cobbler is so simple, and you even use a boxed cake mix!
