This is a big cooking week for us, full of family, company, overnight guests, and Easter celebrations. Thank goodness I’ll have lots of help. I love holidays when our home is full, a little busy, and so much fun. It’s such a sweet change from the usual routine.

This week’s menu features main dishes that are special enough for company but still easy to make, along with a variety of delicious sides, salads, and desserts.

Let’s start the week with an easy and very satisfying pasta dish that feels just right for early spring. This one-pan dinner has tender pasta, juicy seasoned chicken, earthy mushrooms, and crisp asparagus, all tossed in a garlicky, creamy sauce. And it comes together in about 30 minutes.

I’m pairing it with Nani’s Sauteed Rice, a delicious staple in our home, along with a tangy dressed salad. The week is off to a very tasty start.


It’s grilling time, and you know how much we love to grill! Tonight’s easy chicken dinner is full of fresh, bright flavor and perfect for a spring evening.

This menu is all about those classic Mediterranean flavors we love. Think simple, fresh, and so satisfying. It’s like bringing a little Greek-inspired dinner right to your table.

I’m especially excited to try homemade pita bread again. I made it years ago and remember how delicious it was. I can’t wait to make it again and enjoy it warm from the oven. It’s worth the effort.


Company’s coming, and you know I love that! I enjoy cooking and trying new recipes when we have family or friends over. My philosophy is simple: if a recipe doesn’t turn out, we can always order pizza.

But just looking at this one, I know it’s going to be a winner. This pork dish has such simple elegance with its bold Dijon flavor, and it’s paired with a cozy, down-home potato casserole. It’s the kind of meal that feels a little special but still very comfortable.

Tonight’s dessert is both gorgeous and delicious. I’m a big fan of bundt cakes, especially when they get a little help from a box mix. I enjoy baking, but icing a cake is not my favorite thing to do, so a bundt cake is always a great choice. It’s easy, pretty, and always turns out so well.


Tonight’s dinner is another staple in our home, and I absolutely love this recipe. Our whole family does. It’s a heritage dish my mom made for us when we were growing up. But this is not your mama’s salmon cake recipe. These are so much easier and, I have to say it, even tastier than the ones from my childhood.

The air fryer makes all the difference. It gives the salmon cakes a crisp outside and keeps the inside soft and delicious. If you don’t have an air fryer, it’s definitely worth thinking about. I use mine all the time. If you don’t have one yet, you can pan-fry these cakes.

It’s family pizza-and-movie night, one of our favorite traditions. We started this when our kids were little, and now they are continuing it with their own families. Tonight, our son’s family is coming to us, and I couldn’t love it more.

Emma Kate and I will be watching the animated movie Sing for the 100th time, and her younger siblings will enjoy it too.

Have you ever had lavash bread? It gets wonderfully crisp when baked and makes the perfect base for pizza. And this one is so pretty, it almost looks too good to eat.

I always look forward to Friday nights like this, good food, a fun movie, and time together as a family.

Dinner today is very much a tradition at our house. My family likes what it likes on holidays, and Easter is no exception. I do not make ham very often, and I really should. It truly is the gift that keeps on giving: a wonderful holiday meal, delicious leftovers, and a soup bone that becomes the base for a cozy soup later on. I love the flavor of orange with ham, so I’m trying a new glaze recipe. An Easter adventure.
