Late spring in Lancaster County is absolutely beautiful! And delicious. Farmstands are open, and fresh local asparagus and rhubarb are plentiful. So of course, they’re making an appearance on this week’s menu. Feeling hungry? Me too! I’ve rounded up 38 scrumptious recipes you’re going to love.

This week starts off with one of our favorite meals, Fish Tacos!
These are so delicious and healthy-ish! Add the topping you like to personalize them! The fish in these tacos is battered and fried, but you can air fry it, broil it, or make it your favorite way.
I love a recipe that is just so easy and colorful! YUM!

Homemade Slow Cooker Refried Beans Topped with Shredded Cheese
One of the most versatile proteins to cook is chicken. Boneless, skinless chicken breasts are a Godsend for those of us who have to constantly watch our waistlines! However, chicken breasts without the skin and bone can be quite boring because they lack flavor! But that’s no problem, really, because there is so much we can do to add delicious flavors to chicken, like today’s recipe.
One extra step I’ve been taking with boneless, skinless chicken is to brine it.
Here’s an easy brine that makes the chicken taste so juicy and good: In a large zip-type bag, add 2 cups buttermilk, 1/2 cup olive oil, 1 1/2 TBS coarse salt, two crushed garlic cloves, and a few dashes of hot sauce. Close the bag and squish with your hands to mix. Add chicken and refrigerate. When you are ready to cook the chicken, pat it dry. This brine recipe is a keeper!

I thought this recipe looked so delicious, I made it last week. And I was right. This recipe is easy to make for a weeknight, but it is perfect for company, too! My pasta-loving husband will love tonight’s dinner! I’ve never made spaghetti pie, so this is a new-to-me recipe from Jenna at Recipe Diaries.
I really like the idea of baking spaghetti so it holds together better, and I’m sure Bobby will be just fine with that!
I’m also making Grandma Lo Bianco’s famous meatballs. I have a batch in the freezer. If you make one thing this week, you should give them a try! They are so delicious!
