I probably don’t need to tell you that I love my air fryer. It makes food so crispy and delicious and has been one of the best kitchen investments I’ve made. The best part? It didn’t cost much at all.
I use it several times a week and have even started making breakfast in it. Air fried two ingredient bagels, breakfast pizza, and donuts are some of my favorites. If you haven’t tried cooking with an air fryer yet, now might be the perfect time.
I grew up eating salmon cakes, but these Air Fryer Salmon Cakes are not my mother’s version. Hers were good, but these are next level. I added a few extra ingredients that take the flavor up a notch. They are crispy on the outside, tender on the inside, and absolutely delicious. Don’t skip the homemade tartar sauce. It’s simple to make and so worth it.
No air fryer? No problem. You can sauté these in a pan or bake them in the oven, and they will still turn out great.

I have a big love for Mexican food. As I write this, a pan of enchiladas is baking in the oven for dinner. Enchiladas are a favorite in our home, and so are fajitas. Tonight’s dinner on the blog is a delicious mash-up of the two, fajitas and a quesadilla. Doesn’t that sound fantastic?
This main dish is served with refried beans, a must-have in our home when Mexican food is on the menu. I often make authentic refried beans from dried beans. It is surprisingly easy. But when I’m short on time, I doctor up a can for a quick and delicious shortcut. A Mexican-inspired meal always feels like a celebration, and the refrieds are always invited.
If you’re making refried beans, be sure to try the blender salsa too. It is made with fire-roasted canned tomatoes, and the flavor is incredible.

Tonight’s dinner is so fresh and full of wonderful Italian flavor. If you are a fan of Caprese salad, you will love this main dish spin on it. Bobby will grill the chicken. He loves his grill and is happy to cook outside unless we have torrential rain blowing sideways.

I have made this scrumptious Cod Piccata quite a few times. It is that good. It is perfect for a weeknight dinner but also special enough to serve to company. This is one of those recipes you will want to make again and again.
I’m pairing it with delicious Greek orzo, which complements the fish’s bright lemon flavor. I’m also serving a creamy cucumber salad to add a fresh, cool element to the meal.

It’s pizza night. Instead of making a traditional pizza, I’m serving the grown-ups something a little different and delicious. We’ll heat up a couple of frozen pizzas for the kids.
The flavor combination in this flatbread is wonderful: caramelized onions, artichokes, and feta cheese. If you don’t have time to make the flatbread, you can use lavash bread as the base for this recipe. It turns out delicious either way.

Chicken Parmesan is one of Bobby’s favorite meals. Tonight I’m making it even easier by cooking it in the air fryer. When we get Italian takeout, Bobby almost always orders Chicken Parmesan. No takeout tonight, Bobby. We’re making it at home.

Tonight we’re grilling skirt steak and serving it with plenty of this fresh, herby sauce. Skirt steak and flank steak are both very easy to cook and full of flavor, making them perfect for grilling. This simple dinner is always a favorite at our house.

I too am so inspired by your menu choices each week!! Can you give any tips for cleaning an air fryer? Mine seems to have built up some sort of film I can’t get off.
Thank you so very much for the delicious recipes! I have a decorating question. I purchased a dark grey sectional,had it customed made, I always had off white and went dark this time. Bad mistake. What color pillows can I accesorize with?
Brighten it up with textural light neutral pillows. Use one pillow that has warm tones to make the dark gray look more warm. Hope this helps.
