I just love summer cooking! There’s nothing better than the abundance of fresh fruits, veggies, and herbs that come with the season. This week’s menu is full of simple, flavorful dishes made from the summer bounty I’ve picked up at farmers’ markets and roadside stands.

If you’re looking for a little inspiration for what to cook this week, this plan is filled with ideas for everything from easy weeknight dinners to special weekend treats. Just mix and match, or follow the plan as it is!

Here’s what’s On The Menu for the week of June 16th.

I’m planning to make one of my favorite summer recipes today, air fryer salmon cakes! These are packed with flaked salmon, sautéed veggies, and lots of fresh herbs, then crisped to perfection in the air fryer. I love serving them with a dollop of homemade tartar sauce. Light, flavorful, and so easy—perfect for a warm-weather dinner!

There should be a sign in my kitchen: “I stop for puff pastry”! Because I’m a huge fan! And I think galettes, rustic free-form tarts, are just the most beautiful things. So tonight’s recipe joins these foodie loves together with spinach and feta and other savories to make a mouth-watering dinner!

These galettes would make a fabulous breakfast treat with a fried egg over the top. YUM!

Scallops are one of my favorite foods, and they are very calorie-friendly! These beauties are cooked in butter. To keep the calorie count down, I’ll be careful to spoon just a little bit of that gorgeous sauce (oh, that’s hard) over my serving.

Tonight’s summer menu dinner can be made in just 30 minutes, and it’s a family favorite! That is a big win/win! On most nights, I’m feeding just Bobby and me, so I adjust the recipe for two. But for other recipes, like tonight’s Lo Mein, I make the whole recipe for lunch leftovers. And the flavor only gets better!

I sing the praises of an Air Fryer!!! I didn’t always feel that way. I actually gave my first Air Fryer away. Then, I learned some great tips to almost ensure a crunchy outside.

I love easy dinners that are also company-worthy! Chicken Lombardy reminds me a little bit of Chicken Marsala. It has some of the same flavor profile. The fortified wine makes both chicken and mushrooms so much better.

Please leave in the Marsala, it has such an amazing flavor that cannot be reproduced.

I’ll make spaghetti and toss it lightly with olive oil, butter, and Parmesan cheese.

We are having a family summer dinner today, so steaks are on the menu. Bobby usually does the grilling, but I want to try my grilling skills out on the steaks today! I love this recipe from Bitty at No Dash Of Gluten. The marinade is perfect for this steak, and the grilling instructions will yield the perfect steak!
