It finally feels like summer! And summer means lots of herbs and flowers. You’ll find me out in my little gardens every morning with a cup of coffee, tending to my herbs and blooms. Do you use herbs when you cook? I do too! And you’ll see plenty of them in the recipes On The Menu this week!

It’s Memorial Day! I hope you have a meaningful one, friend! Today we are going to a parade in the morning, and most of our family will go home after lunch, so I’m packing up some goodies, picnic style, so we can enjoy them as we watch the parade. My daughter and daughter-in-law will pitch in, so this breakfast on the go should be easy and delicious!

Dinner will be easy, because I will probably be tired, in a good way!

I could eat this soft taco for lunch every single day! YUM! I must admit I love taco-seasoned ground beef, so I might use a bit of ground beef and some ground turkey. Without the tortilla, this would be delicious in a lettuce bowl.

I love the flavors of Peruvian Chicken, so I am excited to try this recipe.

Thanks, Country Cleaver! Peruvian chicken has a delicious marinade with distinctive smoky and bright flavors. I love to eat this chicken with Chimichurri sauce. Whizz this herb-y sauce together and drizzle it over meat or potatoes. The herbs in our raised gardens are big and lush, perfect for this scrumptious sauce.

We like to make extra chicken and have it for lunch the next day.

The cauliflower bake caught my eye, but I’ll use whole-fat dairy and just eat less.

Wow, these stuffed Mushrooms look amazing! Bobby LOVES mushrooms, and he will love these with a little pasta!

Thanks, Sweet Peas And Saffron.

I’m a huge fan of chopped salad. I usually get a great bagged version and make my own dressing. It’s so worth the extra effort! Delish!

Salmon in a bath of creamy lemony sauce. I have a rule about not eating salmon with cheese. However, I think this salmon dish is a rule breaker!

I love sandwiches with slaw! It’s the perfect combination of bread, meat, and crispy cabbage. So good. Thanks, A Blessed Mamma!

When family comes for dinner, I want an easy menu worthy of a Sunday family meal! This beef tenderloin looks like you need a culinary degree to make it, but really, I love cooking roasts because they are so very easy! Your best friend will be a meat thermometer to know when it is PERFECTLY done! Thanks, Half-Baked Harvest!

The asparagus salad will pair beautifully with tenderloin. I think I’ll blanch the asparagus for a minute and plunge them into an ice bath before I slice them on the bias for the salad. Doing this takes the edge off the green taste.

I’m not much for sweets, or so I say. Lately, I’ve needed just a tiny something sweet with a cup of afternoon coffee

At the end of this article where it says “What are You Having for Dinner this Week”, it shows a picture of sliced avocados with ingredients on top of them, would you happen to have that recipe?
