Here’s what’s On The Menu for the week of November 3rd.

Fall is the perfect time for a big bowl of hearty soup, and this Sausage and Kale Soup checks all the boxes. It’s warm, satisfying, and so easy to put together, even on a busy weeknight.

I’ll be making a few small changes to the recipe to suit my own tastes. I’m not a big fan of kale, so I’ll be swapping it for Swiss chard. And instead of chickpeas, I’ll be using cannellini beans for a creamier texture and a little extra richness. That’s the beauty of a good soup recipe… It’s easy to make it your own.

This is one of those recipes that makes your home smell amazing and brings everyone to the table. It’s definitely going into my fall meal rotation.


I grew up eating salmon cakes, but the ones on tonight’s menu are not my mom’s!

These are filled with aromatics and have such a gorgeous complex flavor. And I serve them with homemade tartar sauce, which is so much better than anything you can buy in a store! I make these salmon cakes every other week. They are wonderful for lunch the next day, and they are so good for me… and you!

If you don’t have an Air Fryer, this is the one I recommend and use.


I usually grill flank steak quickly over high heat, but this week I’m trying something a little different and roasting it in the oven. Flank steak is one of our favorite cuts of beef. It’s full of flavor, cooks quickly, and this recipe makes it easy enough for a weeknight dinner.

One of the things I love most about meals like this is the leftovers. I’ll be saving whatever we don’t eat for Saturday’s lunch or dinner, and maybe even a sandwich or salad later in the week. Cook once, enjoy twice, or even three times.

And what goes better with steak than a big spoonful of mashed potatoes? I’m trying something new there, too. Not everyone in our family loves plain mashed potatoes, so I like to mix in other vegetables for a little variety. Sometimes I add celery root, but tonight I’m planning to mash them with sautéed leeks. The mild onion flavor from the leeks is so delicious and adds a little something special to the dish. I think it will pair beautifully with the steak.


We really do eat with our eyes first, and this bone-in pork chop recipe is absolutely beautiful. Just looking at it makes me hungry. The presentation is stunning, but the flavors are what truly make it special.

And those grilled polenta cakes? They sound divine. I’m planning to swap out the goat cheese for feta, which has a nice salty bite that I think will pair perfectly with the creamy polenta and juicy pork chops. This meal feels both rustic and elegant, and I can’t wait to give it a try.

  3. We had your Creamy Cajun Pork Chops and Perfect Roast Chicken this week. They were delicious! We used a store bought Cajun seasoning for the chops and found it it to be on the salty side so we are looking for a diy Cajun seasoning so that we can control the salt content. We did not follow the chicken recipe all the way. We injected the chicken with store bought Cajun style butter marinade and then buttered and seasoned the skin and cooked it on a bed of carrots, onions and celery. The chicken was a little dry but still good so we will need to figure out the proper time for our oven, but the veggies were divine! Thanks for the recipes!

  5. I love your recipes. You save my life some weeks! I recently made pumpkin bread and it had a “grit” when you bite down sometimes. I googled it and found that it is because of the lactose in the process of canning the pumpkin and that some brands of pumpkin are worse than others. What brand of canned pumpkin do you use?

    1. Hmmm, interesting! I’ve never had that problem but what a disappointment! I have always used Libby’s.
