Are you a seasonal cook? I love taking advantage of the early-spring produce I’m finding at our local farmers’ market. Right now, asparagus and leeks, as well as beautiful, tender salad greens, are the first in-season veggies I’m seeing. And they are on the menu this week!

Whether youโ€™re cooking for a crowd or just keeping things simple, this menu has something tasty every day. My grocery list is full of springtime favorites. Let’s get cooking.

Here’s what’s On The Menu this week…

Bobby and I just got home from celebrating our anniversary with a little early getaway, and I wanted to make him a dinner that feels just as special at home. Steak is always a favorite around here, and honestly, itโ€™s one of the easiest meals to make feel a little extra without a lot of fuss.

Tonightโ€™s main dish is a Pan Seared Ribeye Steak with Bleu Cheese Butter, and if youโ€™ve ever been nervous about cooking steak on the stovetop, this is a great place to start. A good sear creates so much flavor, and I actually think itโ€™s even better than grilling.

Iโ€™m pairing the steak with Perfectly Roasted Asparagus, which is in season right now and tastes so fresh and simple alongside a rich main dish. The Upside Down Potato Onion Tart adds something a little special and a bit hearty to the plate, balancing the meal beautifully.

And because itโ€™s a celebration, Iโ€™m making dessert too. From Scratch Carrot Cake is Bobbyโ€™s favorite, and itโ€™s the perfect sweet ending to a cozy, at-home anniversary dinner.


After last nightโ€™s steak and carrot cake, I always like to lighten things up a bit, and this meal does just that without giving up any flavor.

Tonightโ€™s main dish is Pan Seared Cod in White Wine Tomato Basil Sauce, and itโ€™s one I come back to often. The cod is tender and flaky, and that light, flavorful sauce makes it feel a little special while still being easy enough for a weeknight.

To go alongside it, Iโ€™m making Copycat PF Changโ€™s Spicy Green Beans. They add just the right amount of bold flavor and a little kick, which pairs so well with the delicate fish. And of course, weโ€™re having our favorite Arugula Salad with Pinenuts, Lemon Vinaigrette, and Shaved Parmesan Cheese. Itโ€™s fresh, peppery, and bright, balancing the whole meal beautifully.

This is the kind of dinner that feels light and fresh but still completely satisfying.


If youโ€™ve been around here for a while, you know we love soup, and this is one of those meals that makes the whole kitchen feel warm and welcoming.

Tonightโ€™s main dish is Ukrainian Mushroom Soup, and it sounds so rich and hearty. I love meals like this that can simmer away and fill the house with the best aroma. I may swap in homemade chicken bone broth for a little extra flavor, which makes it even more satisfying.

To go with the soup, Iโ€™m serving Homemade No-Knead Artisan Bread. A crusty, chewy loaf is just right for soaking up every bit of that delicious broth, turning a simple soup into a complete meal.

Iโ€™m also adding The Best Broccoli Salad on the side. It brings a fresh, crisp contrast to the warm soup and bread, and I think every meal needs a little something fresh to balance it out.

This is the kind of dinner that feels simple, cozy, and so good at the end of the day.


Tonight is all about easy, flavorful food that comes together quickly but still feels like a treat.

The main dish is Chicken Quesadillas, and they are always a hit. Theyโ€™re loaded with chicken and veggies, and I love how flexible they are. Iโ€™ll probably add a few extras like corn and refried beans to make them a little more hearty and filling.

Of course, we have to have Homemade Guacamole on the side. It adds so much fresh flavor and a creamy contrast to the crispy quesadillas. It really pulls everything together.

Iโ€™m also serving Mexican Chopped Salad, which brings a bright, fresh crunch to the meal. It balances the richness of the quesadillas and makes dinner feel complete without adding any fuss.

This is one of those dinners thatโ€™s quick, family-friendly, and full of flavorโ€”perfect for a weeknight.


Friday nights are all about family time at our house, and itโ€™s one of my favorite traditions of the week. We gather with our Lancaster family, have dinner together, and end the evening with a kidsโ€™ movie. Right now, Peter Rabbit seems to be on repeat!

Tonightโ€™s main dish is pizza from our favorite local Italian restaurant, which makes things easy and lets us focus on being together.

To go with it, Iโ€™m making a big bowl of Herby Italian Orzo Salad. I love a good chopped-style salad, and the addition of orzo makes this one a little more filling. Itโ€™s fresh, flavorful, and pairs so well with pizza.

And because Friday nights call for something fun, Iโ€™m making Snickerdoodle Bar Cookies for dessert. Theyโ€™re soft, sweet, and perfect for sharingโ€”especially with little hands waiting nearby.

This is a simple, relaxed meal, and honestly, those are often the very best kind.



Saturdayโ€™s dinner is light, fresh, and full of spring flavor, but it still feels like something a little special.

The main dish is Salmon in Roasted Red Pepper Sauce, and itโ€™s such a good one. The salmon is tender and flaky, and that creamy roasted red pepper sauce adds so much flavor without feeling heavy.

Iโ€™m serving it with Garlic Butter Rice, which is soft, fluffy, and perfect for soaking up every bit of that delicious sauce. It makes the whole meal feel a little more complete and comforting.

On the side, Parmesan-Roasted Leeks add a lovely seasonal vegetable. Theyโ€™re tender with just a bit of crispness and a light cheesy flavor that pairs beautifully with the salmon.

This is one of those dinners that looks impressive on the plate but is actually very easy to pull together.


We have out-of-town family visiting this weekend, and since we donโ€™t get to see them nearly as often as weโ€™d like, I want dinner to feel a little special without keeping me in the kitchen the whole time.

The main dish is Irresistible Herb Crusted Baked Boursin Chicken, and itโ€™s perfect for a day like this. Itโ€™s full of flavor, a little creamy, and feels like something youโ€™d serve for company, but itโ€™s still easy enough to make without any stress.

This is the kind of meal that lets you enjoy time around the table without feeling rushed, and those are always the best kind.
