If I had a “last meal,” burgers off the grill would be on my menu! I love a big, juicy burger loaded with a huge fresh tomato, crunchy lettuce, and a slice of red onion. We will be trying these Crack Hamburgers for the first time. Looking at the ingredients, I’m sure they won’t disappoint!

Pan-seared cod is one of my favorite weeknight dinners. It’s so easy to make, taking just minutes to come together. When I don’t feel like cooking an OTM dinner recipe, I can quickly thaw cold loins (not fillets) and have a delicious dinner on the table quickly. I buy the thickest fillets I can find and only use the thickest part of those fillets. I save the thinner parts for soup.

I’m serious about perfectly baked potatoes. They are miles (in the best direction) from the ones most of us throw in the microwave or oven. The American Test Kitchen is one of my favorite sites to go to when I want to know how to make “the best”. You will love these potatoes!

The asparagus recipe is embarrassingly old, but it’s delicious, and so is the cucumber salad!


I thought this recipe looked so delicious, I made it last week. And I was right. This recipe is easy to make for a weeknight, but it is perfect for company, too! One thing I always do when I cook chicken, especially boneless, skinless chicken breasts, is to brine them for 30 minutes before cooking them. It’s super easy and keeps them moist. Here’s how: Put 1/4 cup salt in 4 cups of water and stir to dissolve the salt. Add chicken and brine for 30 minutes to 1 hour. Take the chicken out and pat it dry before using it in a recipe.


Clam Chowder is a summery meal around here. We live within half an hour of the Chesapeake Bay, and clams are a May through September way of life. Tonight’s dinner will be a big bowl of Clam Chowder and a side salad. The recipe, another StoneGable post from 2026, is old, but it is just the best! I’ll double this recipe and have a small bowl for lunch. Clam chowder is one of those recipes that tastes better the next day!

Most Friday nights, we have family over for dinner, which means making something my grandbabies will eat. Most of the time, we have ordered pizza, and I make a big salad and some kind of dessert. However, when I saw this recipe for delicious-looking hard shell tacos, I knew I had to try it. This recipe makes 10-12 tacos.

Chocolate chip cookies are on the menu, and this barely baked variety is fabulous! If you like chocolate chip cookies, you should try these!

We eat salmon regularly. Tonight’s recipe is so simple but wonderfully flavorful and tender. I’m a big fan of sweet chili sauce! It’s always in our refrigerator because it gives a savory dish a bit of sweetness, adding that wonderful umami je ne sais quoi.

I will probably use the Air Fryer to cook the salmon. I cook it at 350° for 7 minutes, flipping once. It all depends on how thick the salmon is.


Almost every Sunday, one of my dear friends joins us for dinner. I’ve known her for more decades than I wish to tell you, and she is now family. No matter what we are doing, she is included. Tonight’s dinner is super easy. It’s a dump-and-bake pasta recipe. The chicken gets dumped in raw, and the pasta is uncooked! What a great casserole for a weeknight or a laid-back Sunday!

If the weather is nice, we will eat on the patio.

  2. I agree. Summer needs to come so we can be outside getting our planting and other work done! Here in NE Iowa it has rained most of the week and it was in the upper 40’s for a high yesterday, today, and tomorrow. They say upper 50’s to low 60’s next week. We need sun and warmth so we can plant and get much weeding done. So we are still eating chili, scalloped potatoes and ham, all kinds of oven food to warm the house. God is good and in his time the warmth will come – cant wait!

  6. The weather has been crazy here in northern IL too. We had the AC on earlier this week then yesterday we had to turn the heat back on! I don’t have my flower garden in and my plants are sitting on the deck. We had SOOOOO much rain, wind and cold that I just can’t get out. All your menus ideas sound yummy. In fact I’ve used quite a few of them, always delicious.

  13. Sorry you have had a hard time getting in the garden. In North Louisiana we have had a different kind of Spring but I did manage to plant some vegetables. We have actually harvested squash twice. Nothing better than from the garden to the table! I love reading your menu of the week because it gives me “food for thought”.
